For the Salmon Patties:
  • 1 lb fresh salmon fillets (skin removed)
  • 1/2 cup breadcrumbs (panko or regular)
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)
    the Basil Mayo:
  • 1/2 cup mayonnaise
  • 1/4 cup fresh basil leaves, finely chopped
  • 1 tbsp lemon juice
  • 1 small garlic clove, minced
  • Salt and pepper, to taste
For Assembly:
  • 4 burger buns
  • Lettuce leaves
  • Sliced tomatoes
  • Red onion slices (optional)

Instructions

Preparation:

Step 1: Prepare the Salmon Patties
    • Finely chop the fresh salmon fillets or pulse them briefly in a food processor until they are finely ground but not pureed. You want small chunks for texture.
    • In a large bowl, combine the chopped salmon, breadcrumbs, egg, garlic, Dijon mustard, lemon juice, parsley, salt, and pepper. Mix well to combine.
    • Divide the mixture into four equal portions and form them into patties. Set aside on a plate.
Step 2: Cook the Salmon Patties
    • Heat olive oil in a large skillet over medium heat.
    • Add the salmon patties and cook for 3-4 minutes per side, or until the patties are golden brown on the outside and cooked through on the inside.
    • Remove from the skillet and let them rest for a few minutes.
Step 3: Make the Basil Mayo
    • In a small bowl, mix together the mayonnaise, chopped basil, lemon juice, garlic, salt, and pepper.
    • Taste and adjust the seasoning as necessary.
Step 4: Assemble the Burgers
    • Toast the burger buns if desired.
    • Spread a generous amount of basil mayo on the bottom half of each bun.
    • Place a lettuce leaf, a slice of tomato, and a cooked salmon patty on top.
    • Add more basil mayo on top of the patty, then place the top half of the bun to complete the burger.
Step 5: Serve
    • Serve the salmon burgers immediately with your choice of side dishes.

Notes

If you prefer a spicier kick, you can add a pinch of cayenne pepper or some chopped chili to the salmon mixture before forming the patties. Additionally, grilling the salmon patties is another excellent option if you want that smoky, charred flavor.
