Instructions
Step 1: Prepare the Cornbread
Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Grease an 8-inch square baking dish or a cast-iron skillet to prevent sticking.
Mix the Dry Ingredients:
- In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- Whisk the ingredients together until evenly combined.
Combine the Wet Ingredients:
- In a separate bowl, whisk together milk, vegetable oil, and eggs until smooth.
Combine the Mixtures:
- Pour the wet ingredients into the bowl with the dry ingredients.
- Stir gently until just combined (avoid overmixing to keep the cornbread light and fluffy).
- Fold in corn kernels, diced jalapeños, and cheddar cheese if using.
Step 2: Bake the Cornbread
Pour the Batter:
- Transfer the batter into your prepared baking dish or skillet.
- Spread it out evenly with a spatula.
Bake:
- Place the dish in the oven and bake for 20-25 minutes.
- Check for doneness by inserting a toothpick into the center; it should come out clean.
- Once baked, remove the cornbread from the oven and let it cool slightly.
Step 3: Make the Maple Honey Butter
Mix the Butter:
- In a small bowl, combine softened butter, maple syrup, and honey.
- Use a spoon or electric mixer to blend the ingredients until smooth and creamy.
- Transfer the butter to a serving dish or ramekin.
Step 4: Serve
Cool and Slice:
- Allow the cornbread to cool for about 5-10 minutes to make slicing easier.
- Slice into squares or wedges.
Serve with Maple Honey Butter:
- Spread the butter generously over the warm cornbread.
- Enjoy the sweet and spicy combination with every bite!
